The Melter 5 kg is a professional chocolate melting and warming solution designed for artisan chocolatiers, small confectioneries, and panning machine operators. It provides stable, even, and energy-efficient heating without overheating, preserving the perfect texture and fluidity of chocolate and nut-based pastes.
Unlike traditional bain-marie systems, this melter features Infrared Heating Elements, strategically placed across the entire inner surface (bottom and four walls). This ensures smooth and uniform heating, preventing hot spots, burning, or temperature fluctuations, keeping chocolate at an optimal working consistency for extended periods.
A built-in thermocouple sensor precisely measures the temperature at the bottom of the melter, providing accurate control over the heating process. For surface temperature monitoring, especially during tempering, using an infrared thermometer is recommended.
The Melter 5 kg operates without a water bath, eliminating the risk of moisture contamination that can cause chocolate to seize or crystallize. This makes it an essential tool for tempering, enrobing, panning, and handling multiple chocolate varieties simultaneously.
