Description

Roll of siliconized paper BA-1-70 F292mm. Fits the chocolate enrobing machine 300 mm by KADZAMA.

To make the manufacturing of your chocolate products as comfortable and fast as possible with an enrobing machine, we recommend using this paper. It’s placed on a moving conveyor belt along which the glazed products move. The roll is installed and fixed in a special place under the belt. The paper serves as an interlayer between the product and the belt of an enrobing machine, that allows, firstly, to avoid belt contact with the chocolate and get rid of the equipment cleaning, secondly, it is comfortable to move the finished products directly with the paper either into the cooling tunnel or on a baking sheet.

Covered on both sides by wax, total thickness approx. 61 gr/sqm (10 vegetal wax + 41 paper + 10 vegetal wax)

Thanks to @for_choco_biz Kadzama in Russia for this nice little vibratory sieve to pour the chocolate through. Sieving the chocolate helps us catch any unground particles, or squirrels.

It's a great wee machine, vibrates a lot obviously. Would recommend it to anyone tired of tapping a sieve over a bucket, just make sure your containers fit and the lowest tilt point is high enough on the melangeur.

In the past, we had difficulty getting our milk chocolate down to below 20 microns (with other brands of similar size), but with Kadzama's equipment, it can get down to 15 microns. Another very cool feature is that you can control the speed of the drum rotation for precise temperature control of your creations. Though a little pricier than some other brands, it is totally worth the investment. If you are serious about your chocolate craft, then Kadzama is for you!
