The KADZAMA Chocolate Panning Machine gives you two batch sizes in one compact setup. It includes one motor base and two interchangeable stainless-steel drums: a 3-litre drum for small batches and a 9-litre drum for regular production.
Use it to coat nuts, dried fruit, coffee beans, seeds, cereals and other centres with chocolate or glaze. Continuous rotation helps distribute the coating evenly and build a consistent finish.
Both drums are included. This means you can test a recipe, produce samples and move to larger batches without purchasing a second machine.
The recommended load depends on the size, shape and density of the product being coated. The figures below show the approximate product load per batch before coating.

Loads are approximate and may vary depending on the dimensions, density and shape of the product, as well as the coating process.
The 3-litre drum has a recommended product load of up to approximately 2 kg. It is well suited to recipe development, ingredient testing, product samples, limited editions and small production runs.
Working with a smaller drum also helps reduce the amount of ingredients required during development, which is particularly useful when testing expensive nuts, chocolate or inclusions.
The 9-litre drum has a recommended product load of up to approximately 5 kg. Use it for repeat production of established recipes, including chocolate-coated nuts, dried fruit, coffee beans and other dragees.
Once a product has been developed in the smaller drum, you can transfer the process to the 9-litre drum using the same motor base.
The interchangeable drum system allows you to match the equipment to the batch you need on the day. It is a practical solution for chocolatiers, confectioners, bean-to-bar makers, pastry shops and small production workshops.

The recommended loads of approximately 2 kg and 5 kg may vary depending on the size, shape and density of the product, as well as the coating process.

There may be several reasons:
Insufficient rotation time in the drum (the gloss did not have enough time to dry).
Solution: Increase the drying time (there is no exact time, a lot depends on the temperature/humidity in the room and the composition of the gloss). Dragees should not be sticky to the touch.
Humidity level in the room is too high (above 70%).
Solution: Reduce indoor humidity. For example, ventilate or turn the air conditioner on.
Incorrectly selected gloss.
Solution: Choose a gum arabic-based gloss.
The reason is the violation of the temperature regime during panning and / or storage of ready-made dragee. The optimal room temperature for dragee making is 18–20ºC. If the temperature is higher, surface defects may occur after panning.
