Cocoa Bean and Nut Processing
  • Designed primarily for cracking roasted cocoa beans and separating the nibs from the husks.
  • The crushing mode can also be used for selected roasted nuts when a coarse, crushed product is required.
  • Machine settings should be adjusted to the size, density and required particle size of each product.
  • Throughput and processing losses may vary when working with nuts.

Description

The job of a cocoa bean crusher is simple to describe but expensive to get wrong: it needs to work quickly and remove the husk cleanly without carrying valuable cocoa nibs away with it. When the airflow or feed rate is poorly adjusted, part of the saleable product can end up in the husk compartment. A well-set machine helps keep that loss under control.

The KADZAMA crusher and winnower produces up to 60 kg of cocoa nibs per hour from roasted cocoa beans. It cracks the beans and separates the nibs from the lighter husks in one process. The machine can also be used with suitable roasted nuts, with the settings adjusted to the size, density and condition of the raw material.

Product loss may reach 15%, depending on the beans and the way the machine is set up. Airflow, fan speed and feed rate all affect the result. Too much air may pull smaller pieces of nib into the husk compartment, while too little air leaves more husk in the finished nibs. The operator can adjust the process to find the right balance between cleaner nibs and better product recovery.

See the separation as it happens

Transparent viewing panels make the entire process visible. The operator can follow the material through the hopper, crushing area and husk compartment, making it easier to notice when the separation changes and adjust the airflow before a significant amount of product is lost.

If the nibs still contain some husk after the first pass, they do not need to be crushed again. An additional hopper on the left allows the machine to run in winnowing-only mode. The nibs pass through the separation system without returning to the crusher, so they can be cleaned again without being broken into smaller particles unnecessarily.

Simple to operate and quick to clean

The controls are straightforward, and the main processing area is accessed through a single door. This makes routine cleaning and inspection easier, particularly when changing between batches or working with different products.

The machine is compact, lightweight and mobile, so it can be moved around a small production space when required. Its AISI 304 stainless steel construction provides a durable, hygienic working surface suitable for regular food production.

Cocoa dust is collected in a separate bag rather than being released around the workspace. The cocoa husks are directed into their own compartment, away from the finished nibs.

Two separate outputs

The process produces two materials: cocoa nibs for further refining and cocoa husks. Efficient separation matters because every piece of nib collected with the husk represents lost product and lost margin.

The separated husks do not necessarily have to be treated as waste. Depending on their quality, intended application and local food-safety requirements, they may be considered for cosmetic formulations or fibre-rich products. Separate collection helps keep this by-product cleaner and easier to handle.

FAQ
A cocoa bean crusher and winnower is used to prepare cocoa beans for further chocolate production. It crushes roasted cocoa beans into nibs and automatically separates the husk (shell) using an adjustable airflow. The result is clean cocoa nibs, ready to be loaded into a melanger or other grinding equipment.
Yes, but it makes the process much more difficult and time-consuming. Without dedicated equipment, cocoa beans must be crushed and winnowed manually, which significantly reduces productivity and often leaves more shell fragments mixed with the nibs. For regular bean-to-bar chocolate production, a crusher and winnower is considered essential equipment.
After processing, you get clean cocoa nibs, typically ranging 1–4 mm in size, with minimal shell content. The nibs are ready for the next production stage, such as grinding in a melanger or a pre-grinder.
The machine is designed to handle roasted cocoa beans of various origins and grades. Thanks to the adjustable airflow and operating speed, the equipment can be fine-tuned for beans of different sizes and roast levels to achieve optimal separation quality.
Yes. The crusher with a separator is specifically designed to work with roasted cocoa beans. During the roasting process, the shell becomes more brittle and separates from the cocoa nibs more easily, which ensures high-quality cleaning.
With the equipment properly adjusted, the yield of cocoa nibs can reach up to 80% of the initial weight of roasted cocoa beans. The remaining portion consists of husk and a small amount of fine particles removed during separation. The actual yield depends on the cocoa bean variety, fermentation quality, degree of roast, and airflow settings.
Yes. Although the machine is capable of processing up to 100 kg of roasted cocoa beans per hour, it can also be used for small batches. This makes it suitable for testing new cocoa origins, developing recipes, or producing limited-edition chocolate. When working with small quantities, adjusting the airflow helps ensure efficient shell separation and high-quality cocoa nibs.
Yes. The KADZAMA Crusher is suitable for crushing certain types of nuts. Compatibility depends on the type of nut and its level of preparation, so we recommend testing the machine with a small batch of your raw material before regular production.

We’ve had a very good experience with the KADZAMA crusher. We use it as part of our bean-to-bar chocolate production in front of our customers, and this machine is particularly well suited for this purpose because it is partially transparent, allowing them to see the crushing and separation process. The customer service is also exceptionally efficient.
